Mac and Cheese Meatloaf Casserole

Preheat your oven to 350°F (175°C): This ensures your dish cooks evenly.
Grease a 9×13 baking dish well: Use butter or non-stick spray for easy cleanup.
Step 2: Prepare the Meatloaf Mixture

Combine BBQ Sauce and Ketchup: In a small bowl, mix 1 cup of BBQ sauce with 1 cup of ketchup. Set aside.
Mix the Meatloaf Ingredients: In a large mixing bowl, add 2 lbs of ground beef, 30 crushed Ritz crackers, 2 eggs, 1 packet of onion soup mix, and half of the BBQ sauce mixture. Knead until well combined.
Layer the Meatloaf: Press the meat mixture evenly into the bottom of the greased baking dish.
Step 3: Bake the Meatloaf

Add the BBQ Glaze: Spread the remaining BBQ sauce mixture over the meat layer.
Bake: Place in the preheated oven and bake for 30 minutes.
Step 4: Cook the Macaroni

Boil the Macaroni: Cook 3 cups of macaroni noodles in boiling water until al dente. Drain well.
Step 5: Prepare the Cheese Sauce

Whisk the Cheese Sauce Ingredients: In a bowl, whisk together 10.5 oz of cheddar cheese soup, 2 cups of milk, 1 Tbsp onion powder, 1 Tbsp garlic powder, 1 tsp salt, and 1 tsp pepper.
Step 6: Assemble the Mac and Cheese Layer

Combine Macaroni and Cheese Sauce: Toss the cooked macaroni in the cheese sauce mixture. Stir in 1 cup each of shredded mozzarella and cheddar cheeses.
Layer on Top of Meatloaf: Spread the macaroni mixture evenly over the baked meatloaf.
Step 7: Final Bake
